This week, DGC volunteer Agen takes through some starting points for recipes:

  • This Zesty and Zippy Tangled Collards recipe from Food 52 looks great, but instead of the Mama Lil’s peppers, I’ll probably use some of our stockpile of Pangea Curtido or Kimchi (available for purchase at the DGC).
  • Speaking of those beans (I’m already dreaming of that creamy curry concoction as I type), some quick pickled red onions would be a grand addition.
  • For this week’s tomatillos, salsa verde is always a good choice (here’s one recipe from Love & Lemons). Here’s a collection of tomatillo recipe ideas from Bon Appetit for more inspirado.

Here are some tidbits to think about from the contents of this week’s box.

Magda squash, you say? It’s a Mediterranean summer squash that’s similar to the zucchini, but with a paler green skin and more globe-shaped (like an eggplant.) This plump squash is typically about 4 inches long, has a sweet, faintly nutty flavor, and works in recipes that would call for zucchini.

Because of its plump size, it’s a good candidate for stuffing. Here are a couple of recipe starters:

Recipe Starters

This week’s DGC Essentials Box is built to help you beat the heat with salads over the next few record-setting head-domed days.

  • Here’s a Sicilian-based salad that will go great with just about anything you can put on the grill (so you can keep the heat off in the kitchen). It balances the anise flavor of the fennel with sweet oranges and salty olives.
  • If you are out at the grill, try putting the Romaine on the barbie and topping it with a balsamic and gorgonzola dressing (Food Network).
